Hot Drinks and Cool Vibes Set the Scene at Palomino

Whether you’re stepping out in Louboutins or Luccheses, you’re welcome to belly up to the bar at Palomino, Park City’s newest Main Street watering hole. Since opening in the winter, this latest venture—from Casey Adams and chef Seth Adams and their team behind popular neighboring restaurant, Riverhorse, and Saltbox Eatery and Catering—remains a hot spot.
Despite the equestrian-inspired name, the scene at Palomino is more swanky cocktail lounge than Western saloon. The setting and the staff are warm and inviting. Bartenders don big smiles and bolo ties while slinging unique beverages like the FIU cocktail (a.k.a. Fire It Up), made with Corazon tequila, Aperol, Ancho Reyes chili liqueur, agave, cucumber, and mint. It’s served in a martini glass that’s rimmed with Tajin and then crowned with a massive bubble formed from a flavor blaster, which you can then playfully pop to reveal a dramatic smoky finish.

Other notable house cocktails include the Gold Digger, made with Casamigos mezcal, Cointreau, lime, agave, and a splash of Veuve Clicquot champagne, and the Park City Sour, made with Basil Hayden dark rye whiskey, egg white, a cabernet float, and topped with a chocolate-dipped cherry. New for summer, try the refreshing Dawns cocktail, made with Giffard pamplemousse liqueur, pineapple juice, prosecco, Empress gin, and soda water.
If you’re feeling tipsy just reading this, don’t worry, there are plenty of bar bites and shareable plates to help sop up all that booze. Snack on fancy popcorn (flavors rotate daily), shrimp cocktail, and pimento cheese dip served with addictively delicious deep-fried saltines. Then dig into roast beef sliders, petite lobster rolls, buffalo quail bites, a Cobb salad stack, and more.
Go for the drinks and the eats, stay for the people watching. Or pop by Palomino for a pre-dinner cocktail or a nightcap. But before you depart, be sure to snap a selfie in one of two bathrooms, both decorated with Instagram-worthy neon signs.
