Austrian Charm Meets Deer Valley Chic at the Hirsch

The newly revamped restaurant at the Goldener Hirsch bring an infusion of whimsical charm.

The Hirsch

In late 2020, Deer Valley’s beloved Goldener Hirsch Inn got a major makeover: The charming, 18-room chalet expanded to include 40 elegant residences in two new modern buildings designed by acclaimed architect Tom Kundig. Last winter, the luxe retreat’s signature restaurant unveiled a similar contemporary transformation, this time at the hands of designer Liubasha Rose. Reimagined by her firm, Rose Ink Workshop, the Hirsch pairs a fresh, sophisticated space with a seasonally-driven culinary vision by new Executive Chef Jeff O’Neill. 

The Hirsch retains the original restaurant’s traditional alpine aesthetic but with an infusion of whimsical charm. Rose wove in memories from her Ukrainian childhood—forests, skiing, foraging, and woodland characters—giving the interiors an authentic yet enchanted feel. The bar was reimagined as a cozy, wood-paneled refuge—an ideal spot for après-ski or après-hike—complete with a rustic, hand-painted alpine ceiling, brass tulip lights, and a glowing fireplace that anchors the space.

In the dining room, scalloped parchment lights, embroidered burgundy carpeting, woodland murals, and classic Austrian accents all contribute to a modern fairytale atmosphere. A private dining room wrapped in a Salzburg-inspired wallcovering and alpine-blue banquettes extends the storybook mood in a more intimate setting, while a stylish new nook, located just off the restaurant’s entry, provides an intimate spot to wait for your table or continue chatting with friends after dinner. 

Under Executive Chef O’Neill, the menu retains beloved Bavarian classics such as cheese fondue, Wiener schnitzel, and apple strudel, but also introduces new offerings like raclette and reimagined regional specialties. Menu highlights include dill-cured salmon loin with root vegetable beignets, butter-basted diver scallops, Mishima Reserve hanger steak, slow-cooked rabbit goulash, and a warm mushroom and spinach salad. 

The Hirsch

The Hirsch is open daily for breakfast, lunch, and dinner; the bar is open nightly until 10 p.m. Reservations are recommended. Parking in Silver Lake Village can be tricky, so take advantage of valet parking at the Goldener Hirsch.
