Renowned chef Galen Zamarra, who won a James Beard Award for Rising Star Chef in 2001, is set to transform Union Plaza this winter with the launch of two new culinary concepts. Zamarra’s latest ventures, Le Depot Brasserie and Union Patisserie, both part of his Galen Hospitality Group, are eagerly anticipated by foodies, residents, and tourists alike.

Le Depot Brasserie

660 Main St

Known for his impeccable taste and attention to detail, Zamarra has meticulously crafted the Le Depot Brasserie menu to showcase classic French cuisine. Patrons can look forward to an array of dishes, from steak frites to seafood towers and steak tartare, all prepared with a commitment to technique and flavor. “We are going to honor the classics of French cuisine,” says Zamarra. “I feel like it is a good fit here. I think many people will love a brasserie; we really wanted a great, fun atmosphere in the dining room.” In the winter months, the upstairs will offer a chalet menu and a selection of alpine family-style dishes like fondue and raclette.

Inspired by the original 1890s train station, known as The Depot Building, Le Depot’s interiors evoke a sense of nostalgia and elegance. Art Deco design, vintage bubble light fixtures, and ornate detailing combine to create an atmosphere that transports diners back in time. “We tried to pay homage to the history of the building,” Zamarra says. “We want people to feel comfortable and like they are at home here.”

Union Patisserie

199 Heber Ave

Union Patisserie is a cozy coffee and pastry shop offering light French bites and promises to be a haven for those seeking a quiet spot to indulge in freshly baked desserts, grab-and-go items, and breakfast offerings. Pastry Chef Cassidy Cabel, a rising star in the Park City food scene, previously worked at The Lodge at Blue Sky, part of the Auberge Resorts Collection, and has her own bakery business, CC Sweet Crumbs in Heber. Her creations are set to complement Zamarra’s savory, providing a taste of Paris in the heart of Park City.
