Jell-O may be the unofficial dessert of Utah, but a close second is ice cream. In Midway, Millie and Roger Medby are satisfying those sweet-tooth cravings with Bee’s Knees Ice Cream, hand-scooped at their vintage-inspired Fill’er Up Coffee Station (201 E. Main St, Midway, 435.657.2700) and on the road out of their modern-retro ice-cream truck. “We found a cool old truck, painted it, and cuted it up,” Millie says. “The red shoes that our signature bee is wearing on the side of the truck are in honor of my mother who said, ‘there are no rules about ice cream for breakfast.’”

The Medby’s creamy and sorbet treats are made with premium ingredients—no fake stuff allowed—following more than 200 recipes. Favorites range from classics like chocolate, pistachio, peanut butter, espresso, and coconut-almond to their popular-with-all-ages cake batter, made with real cake batter and sprinkles. The couple also creates unique flavors on request and hosts a weekly flavor contest at Fill’er Up. The winner gets a giant bowl of their chosen flavor, named in their honor, plus their mugshot wearing a cone hat for the wall of fame.

In the warmer months, the Bee’s Knees truck rolls up to parades, festivals, weddings, parties, and other special events (check out the Fill’er Up Facebook page for where the truck will be next), and their ice cream is on the menu year-round at a handful of Park City restaurants, including The Farm, The Viking Yurt, and Cisero’s. The Chateau Deer Valley even keeps pints on hand for their residents.

“It’s all about how it makes you feel: happy, good, and at home. That’s the theme in our businesses,” says Millie. “If our customers feel good, are happy when they come to Fill’er Up, or taste our ice cream and love it, then we are happy.”
