There’s a new kid on the block: Matilda. Brought to you by the same passionate team responsible for Park City favorites Five5eeds and Tilly’s Charcoal Chicken, Matilda continues the group’s Australian influence while crafting exceptional flavors focused on quality and creativity.
“The original intention behind opening Matilda was wanting to have a great neighborhood restaurant that was pizza forward,” says co-owner Mark Shrayber.
The secret to Matilda’s outstanding slices? A 100 percent naturally leavened sourdough crust. Countless hours of dough testing went into perfecting this signature crust—experimenting with hydration levels, fermentation times, and ingredient ratios to achieve just the right balance of flavor and texture. The result is a crust that’s crispy on the outside, airy on the inside, and bursting with a subtle, tangy richness that only natural sourdough can provide.
“We have been testing the dough for over a year and have had some great people involved in getting it to perfection,” says Shrayber. “Pizza is meant to be simple, so we start with a great sourdough, great ingredients, and a fantastic pizza oven.”

With dishes changing daily, the restaurant is a playground for culinary innovation. New ingredients and flavors take center stage, ensuring that every visit feels as exciting as the last. Aside from the Neapolitan-style pies, Matilda also offers shareable plates and proteins.
