Chef James Dumas deftly fuses classic techniques and regional and seasonal flavors with High West spirits to create innovative â€œWestern victualsâ€ offered as small plates. Be prepared to wait for a table, however. In its 10-year tenure on Main Street, High West Distillery has become a well-known Park City visitor’s destination. And, no, they do not accept reservations. Wait for a table here or make reservations for a distillery tour and lunch at High West’s new destination distillery and restaurant at the Blue Sky Ranch in Wanship.
